"FSANZ has released a comprehensive amendment through Proposal P1060, introducing major changes to egg food safety, primary production, and processing requirements under the Australia New Zealand Food Standards Code. The variation, gazetted on 4 December 2025, will come into effect 18 months after the date of gazettal.
The amendment extensively revises Standard 4.2.5 (Eggs and Egg Products), updating the Table of Provisions and modernising regulatory expectations across all stages of egg production and processing. Key changes include:
Updated definitions for broken eggs, cracked eggs, flock, poultry house, and range area.
Mandatory compliance with general food safety management requirements under Standard 4.1.1.
New obligations on animals and pests, ensuring they do not make eggs unsafe.
Requirements for egg producers to ensure range areas, premises, and equipment do not contaminate eggs.
Introduction of environmental sampling (Clause 9A), requiring Salmonella Enteritidis testing in each poultry house.
Strengthened rules on storage and transport of eggs and egg pulp (Clause 9B).
Enhanced traceability, requiring each egg to be uniquely marked, with detailed record-keeping for both producers and processors.
Clear prohibitions on sale or supply of broken eggs or unacceptable eggs for human consumption.
Expanded responsibilities for egg processors, including cleaning controls, marking requirements, processing records, and ensuring safe time–temperature control for eggs and egg products.
Additions to Standard 2.2.2, mandating that eggs for retail or sale to caterers must be individually marked.
These revisions aim to strengthen egg safety, improve monitoring of disease risks, enhance traceability, and align industry practices with modern food safety standards."
