Argentina has adopted MERCOSUR Technical Regulation GMC Resolution No. 14/23 through Joint Resolution No. 5/2026, allowing the use of starches and modified starches as optional ingredients in specific very high-moisture cheeses. The regulation applies to heat-treated cheeses with a moisture content of 55 g/100 g or higher that take the shape of their container or packaging. Manufacturers are permitted to use starches and modified starches at a maximum level of 1% of the final product by mass. This amendment aligns Argentina's food regulations with harmonized MERCOSUR requirements, updates the Argentine Food Code to reflect advancements in cheese manufacturing technology, and supports regulatory harmonization and trade among MERCOSUR member countries. As a result, cheese manufacturers in Argentina now have greater flexibility in formulation while ensuring compliance with the defined moisture and processing standards.
