Food Standards Australia New Zealand (FSANZ) has proposed amending the Australia New Zealand Food Standards Code to permit the use of triacylglycerol lipase (EC 3.1.1.3) as a processing aid in the manufacture of dairy-based products and plant-based dairy analogues.

1.The application, submitted by Chr. Hansen Pty Ltd, covers an enzyme produced by Komagataella phaffii containing the triacylglycerol lipase gene from Yarrowia lipolytica. The enzyme is intended to hydrolyse lipids during processing to support product manufacture and functionality.
2.Following assessment, FSANZ concluded the proposed use is technologically justified and poses no safety concerns under the intended conditions of use. The agency has prepared a draft variation to include the enzyme and its technological purpose in the table of permitted processing aids under subsection S18—9(3) of the Code, with use restricted to levels consistent with Good Manufacturing Practice.
3.If approved, the amendment would authorize the enzyme’s use as a processing aid across dairy and plant-based dairy analogue production, subject to applicable identity, purity, and Code requirements. FSANZ is inviting stakeholder submissions on the proposed variation.
